I don’t know about you but it’s been crazy trying to make peace with this intense heat and humidity!
There are lots of ways to balance the summer heat: Early morning nature walks, getting in or on the water, spending the day indoors and lounging in the brilliance of A/C or thinking cool thoughts.

Summer Watermelon Salad
Dressing – Whisk Together In a Small Bowl
1/4 cup extra virgin olive oil
Juice of 1 small lime
Pinch of sea salt
Few grinds of fresh black pepper
Salad – Combine In a Medium Size Bowl and Mix In Dressing
2 cups watermelon, cubed
1/2 cup cucumber, diced
1/8 cup red onion, thinly sliced
1 small avocado, cubed
2 tablespoons crumbled feta cheese
1/4 cup basil leaves, shredded
Yummy Suggestions:
Serve on a bed of baby arugula and cooked quinoa.
Add some chopped walnuts for crunch.
Change up the fruiit with strawberries.
Try adding chopped mint leaves
