Mediterranean Chickpea Salad
Ingredients
- 1 can garbanzo beans, drained and rinsed
- 1 cup grape tomatoes, sliced
- 1 cup English cucumber, seeded and diced
- 1 cup kalamata olives, sliced
- ¼ cup red onion, diced
- 1 roasted red pepper, diced
- 1 cup feta cheese, crumbled Dressing
- ½ cup extra virgin olive oil
- ¼ cup red wine vinegar
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
Procedure
- Add all the dressing ingredients in a container with a lid and shake vigorously until well combined.
- In a large bowl, combine all the salad ingredients.
- Add the dressing to the salad bowl, toss well and refrigerate for about 20-30 minutes for full flavor. Serve chilled.
