Mediterranean Chickpea Salad

Ingredients

  • 1 can garbanzo beans, drained and rinsed
  • 1 cup grape tomatoes, sliced
  • 1 cup English cucumber, seeded and diced
  • 1 cup kalamata olives, sliced
  • ¼ cup red onion, diced
  • 1 roasted red pepper, diced
  • 1 cup feta cheese, crumbled Dressing
  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Procedure

  1. Add all the dressing ingredients in a container with a lid and shake vigorously until well combined.
  2. In a large bowl, combine all the salad ingredients.
  3. Add the dressing to the salad bowl, toss well and refrigerate for about 20-30 minutes for full flavor. Serve chilled.
