Chickpea Patties

Mediterranean Chickpea Patties


16 oz. can of garbanzo beans

1 tablespoon extra virgin olive oil

1 cup yellow onion, chopped

1 teaspoon smoked paprika

1 teaspoon ground coriander

1 teaspoon ground ginger

1 teaspoon cinnamon

4 teaspoons garlic, minced

½ bunch fresh parsley, chopped

3 tablespoons gluten free flour

Sea salt and pepper

Gluten free flour for coating   

Coconut Oil for frying


  1. In a food processor, pulse the garbanzo beans until chopped but not pureed.
  2. In a small sauté pan, over medium heat, add olive oil and sauté onion until soft and translucent.  Add dried spices and sauté for 2-3 minutes until aromatic. 
  3. Add the garlic and cook 1-2 minutes.
  4. Add the sautéed spice mixture to the food processor along with the parsley and flour.  Season with salt and pepper.
  5. Pulse a few times until finely ground.   Transfer the mixture to a bowl and refrigerate for a minimum of 30 minutes.  Scoop rounded tablespoons of the mixture and form into small patties.   Lightly coat with flour.
  6. In a medium skillet, over medium heat, add a couple tablespoons coconut oil and pan fry the patties for 2-3 minutes on each side until lightly golden and crispy.  Serve with tahini dipping sauce.

Tahini Dipping Sauce: 

In a small bowl, whisk all the ingredients until well combined.

½ cup sesame tahini

1 teaspoon garlic, minced

Juice of 1 lemon

1 teaspoon honey

¼ cup of water (more or less to desired consistency)

Season to taste with salt and pepper
