Mango Turmeric Chia Pudding
Ingredients
- 1 cup frozen mango chunks
- 1 14 oz. can of full fat coconut milk (“Navitas Naturals” or “Thai Kitchen”)
- ¼ cup of honey
- ½ teaspoon turmeric powder
- 1/8 teaspoon of sea salt and black pepper
- ¼ cup chia seeds
Procedure
- In a blender, blend the mango, coconut milk, honey, turmeric, salt and pepper.
- In a large bowl, combine the mango coconut mix with the chia seeds and stir well. Cover and refrigerate for a minimum of two hours or preferably overnight until a pudding like consistency is achieved.
- Top as desired with coconut, flakes chopped nuts and or fresh fruit.
