Very Berry Chia Pudding
1 cup frozen mixed berries
1 14 oz. can of full fat coconut milk (“Navitas Naturals” or “Thai Kitchen”)
1 teaspoon vanilla extract
¼ cup of coconut nectar (“Coconut Secret”) or 100% maple syrup
¼ cup chia seeds
- In a blender, blend the berries, coconut milk, vanilla extract and maple syrup.
- In a large bowl, combine the berry coconut mix with the chia seeds and stir well. Cover and refrigerate for a minimum of four hours until a pudding like consistency is achieved.
- Top with shredded coconut, chopped nuts and / or fresh berries.
