Grain Free Pumpkin Bread

Ingredients

  • 1 cup almond butter
  • ½ cup coconut flour
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • 4 large eggs
  • ½ cup maple syrup
  • ½ cup pumpkin puree
  • 1 tablespoon cinnamon
  • 2 teaspoons nutmeg
  • 1 teaspoon ground ginger
  • 1 teaspoon allspice
  • 1/8 teaspoon salt

Procedure

  1. Preheat oven to 375 degrees.
  2. Line a loaf pan with parchment paper.
  3. In a large bowl, combine all ingredients. Using a hand mixer, mix until well combined.
  4. Pour into loaf pan.
  5. Bake for approximately 45 minutes. Insert a toothpick into the center. It’s done if it comes out clean.
  6. Can be stored in airtight container in a cool place for 2-3 days and then stored in the refrigerator.
